It isn't telling non-existing trams to turn left because it isn't a
'direction sign' for approaching vehicles. The white on blue colour code of
the sign tells you that it is an 'advance information sign' describing the
restrictions in the street beyond the junction. Think of it as information
'about trams' not 'for trams'.

Your second example is similarly not giving direction information to trams,
it is advising all users of a timed restriction due to trams. I can't
really see an issue with it.

Your third example is probably just belt and braces - as IIRC in normal
circumstances emergency vehicles might often go through a no-entry sign to
overtake slow moving queues - perhaps not a good idea here...
