Default First train from Cambridge for off-peak fares?

Other SN destinations (East Croydon, Crawley, Littlehampton) seem to offer
journeys via both the 09:20 and 09:27 so maybe it is just connection
allowances across London that cause it to ignore the 09:20?

No both the off peak and the op day returns are valid on any train departing
at 8.55 or later. Connections are the reason for the suggested start time.
