How difficult would it be to transfer with a wheeled carry on?

Why wouldn't one do it at Baron's Court?

Depends how heavy it is. There are escalators part way but then you
have stairs up to platform level. The station is busy and the steps
are not that wide.

As MIG has said why not change at Barons Court or Hammersmith which
have level, cross platform interchange? Even if you are heading round
towards High St Ken it would probably still be worth cross platforming
at Barons Court and again at Earls Court because it is all on one
level.

As long as you don't mind the walking distance. Compared to a cross
platform interchange it's a marathon.
