Default When does an Oyster pre-paid journey end?

In the same way paper tickets do.

A journey on the Undergournd to Liverpool Street then to Walthamstow
Central on WAGN (sorry - one West Anglia) works fine even with exiting
at the LU gates and entering at the NR ones at Liverpool Street.
