use the remaining PAYG money to pay the difference if I go outside of the
travelcard zones?

Yes. Just watch for unresolved journeys starting or ending in zones not
covered by your travelcard.

You would be amazed by the different ways that my wife has managed to
achieve those and not discover them until her next visit to London, months

You can get away without touching in or out for journeys covered by the travelcard at ungated stations but if you plan to go out of zone you must remember to touch in or out at both ends of the journey.

through a gate without touching (registering) it, I would still be eligible

I may be wrong, but don't recall reading that in the Freedom Pass rules.

The circumstances were that my FP was cracked and not working. I had a new
one being sent to me. The station going in had the gates open and the
exiting station had the gates working. I had to be asked to be let out. I
was asked how I got in and I said that I just walked through the gates.
That's when he made that comment.
