Default Oyster question

If I have a monthly travelcard put onto my PAYG oyster will it intelligently
use the remaining PAYG money to pay the difference if I go outside of the
travelcard zones?

You can get away without touching in or out for journeys covered by the travelcard at ungated stations but if you plan to go out of zone you must remember to touch in or out at both ends of the journey.

I was told by a station attendant that even with my Freedom Pass, if I went
through a gate without touching (registering) it, I would still be eligible
for an £80 fine.

The circumstances were that my FP was cracked and not working. I had a new
one being sent to me. The station going in had the gates open and the
exiting station had the gates working. I had to be asked to be let out. I
was asked how I got in and I said that I just walked through the gates.
That's when he made that comment.
